Description

In German-speaking countries, picanha is generally known as "Hüftdeckel" or "Tafelspitz," with the key difference being that the fat cap is left on for picanha, unlike Tafelspitz.

In Brazil and Argentina, picanha refers to a cut of beef that is preferably grilled on a spit, but also prepared in the oven. It is characterized by excellent taste and tenderness. While there may be regional differences in its preparation, there is nationwide agreement that picanha marks the highlight of a Brazilian churrasco.
Picanha has existed since cattle have existed; it is part of the hip, and every cow has two of them.
According to legend, this cut became famous in the 1960s at the Bambu restaurant in Sao Paulo when a guest wanted to order an Argentinian Bife de Cuadril. Unfortunately, there was none left, so he was served a strange triangular steak with a layer of fat on top. The guest was so impressed by the taste that he called the chef over. The chef then explained that the Bife de Cuadril was out and that he had instead brought him this cut from his hometown of Tucuman (Argentina).
From that day on, the wealthy Brazilian businessman Francesco Matarazzo Pignarati ordered picanha in all his establishments. Since the 1980s, picanha has consequently been the most ordered cut in Brazil.

The Tafelstück and picanha are the tail end of the beef from the sirloin cap. Picanha meat is highly marbled, juicy, and intensely flavored.
